These happen because the bean’s internal pressure builds as moisture escapes and gases expand.

First crack happens around 196–202°C. Here’s what it means:
Moisture inside the bean turns to steam
The bean expands and fractures
It marks the start of development
If you want a light roast or a bright filter coffee, you typically drop shortly after first crack.
It’s the go-to roast milestone for clarity, acidity, and balance.

Second crack hits at around 224–228°C, and it’s different:
Caused by internal structural breakdown
Oils begin to migrate to the surface
