Coffee Roasting Profile – Your Blueprint for Flavor
You ever roast two batches of the same coffee—and they taste totally different? Been there. The difference usually comes down to one thing: the roast profile.
When I started profiling my roasts seriously—especially after switching to a Kafgar Roaster—my coffee leveled up. Sweetness? Up. Acidity? Controlled. Repeatability? Finally real. A roast profile gives you a full map of your roast journey, from the first flame to final drop.

What Is a Coffee Roasting Profile?
A roasting profile is a time-temperature curve that maps how heat is applied to coffee beans throughout the roasting process. It usually includes:
Total roast time
Bean temp (BT) and environmental temp (ET)
Rate of rise (RoR)
Milestones: drying, Maillard, first crack, second crack, drop
Phase percentages (e.g., development = 18%)
Think of it as a musical score for your roast. It tells you what happened, when, and how fast.
Why Roast Profiles Matter
Repeatability
Roasted a perfect Ethiopian? Want to do it again next week? You’ll need that profile.
Learning Tool
Profiling shows how your adjustments (like airflow or flame) impact flavor.
Cup Quality
Better profiles = better sweetness, body, and balance.

Key Elements of a Roast Profile
1. Charge Temperature
Starting temp of the drum. Sets initial heat energy.
2. Drying Phase (~0:00–4:00)
Beans lose moisture. Color shifts from green to yellow.
3. Maillard Phase (~4:00–8:00)
Browning starts. Acidity and sweetness form.
4. First Crack (~9:00–10:30)
Audible popping. Beans expand. Start of development.
5. Development Phase (~10:30–12:00)
Flavor balance builds. Sweetness vs. bitterness trade-off.
6. Drop
Beans released into cooling tray. Roast ends.

Understand the Bean

Overlay roast curves and look for:

For example:
Higher charge = faster drying = brighter cup
Longer Maillard = more caramel notes
Longer development = less acidity, more body

You can wing it and still roast okay coffee. But if you want great coffee—reliable, dialed-in, sellable coffee—you need to profile.
