Dozens of cracked coffee beans stared back at me the first time I poured a fresh batch into my cooling tray.
I went into a panic.
Were they stale? Are you burned? Broken? Shall I throw out the entire batch?

Completely normal, even necessary. Cracks indicate alterations in the bean’s composition:
• First Crack: Moisture escapes as the bean expands (about 196°C)
• Second Crack: Internal CO₂ pressure (about 224°C) causes surface cracks in beans.
2. Cracks Caused by Physical Flaws
Bad. These take place either outside or prior to roasting:
• Green beans that are over-dried or under-fermented
• Poor handling during transportation
Microfractures due to inadequate storage
• Problems with the roaster (too rapid heat ramp)

I now know that the type of crack affects the flavor. I get clean notes and bright acidity from a good first crack. A second crack? That’s bravery and body.
But cracks that are scorched or defective? They typically have a flat, hollow, or ashy taste.
Chapter 3: What Leads to Bad Coffee Cracking?

When drum heat is applied too quickly, the external surface cracks before the internal heat stabilizes.
Issues with Airflow
Hot spots are caused by inadequate airflow. While some beans lag behind, others crack.

Have you ever had more cracked beans than normal when roasting a batch on a rainy day? Uneven moisture is at work there.
Chapter 4: How I Made My Roasts Less Defective Cracked
1. Make sure to properly preheat; never put cold beans in a cold drum.
2. ROR should be gradual and steady, especially during the drying phase.
3. Make use of a drum that distributes heat evenly, such as my Kafgar 6kg.
4. Sort green beans by throwing away any that are obviously chipped or “floaters.”
5. Regulate airflow, which is necessary for surface uniformity.
