  • Driven by native yeast or inoculated with specific strains


Some farms use wild fermentation with no rinsing. Others log every data point and pH level like a science lab. Both can taste amazing. Or terrible. It’s all about control.

 

Deep Dive: Experimental Fermentation Techniques

🧪 Anaerobic (No Oxygen)

  • Beans/cherries are sealed in tanks (CO₂ replaces air)

  • Temps and pH are monitored closely

  • Often used for naturals or honey processes

  • Can create intense boozy, tropical, or fermented fruit notes

  • Risk of acetic acidity if overdone


🧪 Carbonic Maceration

  • Borrowed from wine-making

  • Whole cherries in sealed tanks with controlled CO₂

  • Flavor: clean, sparkling, berry-forward, sometimes floral

  • Very delicate—easy to mess up


🧪 Yeast-Inoculated

  • Specific yeasts added (like Saccharomyces) to drive certain flavor paths

  • Often used to boost fruity, wine-like profiles

  • More consistent than wild ferment

  • Can sometimes taste “too clean” or “controlled”


🧪 Lactic Fermentation

  • Encourages lactic acid bacteria growth

  • Often creamy, smooth, round acidity

  • Can taste like buttermilk, strawberries, custard


 

Roasting Tip: Not All Fermented Coffees Behave the Same

Here’s where it matters.

These coffees are chemically different from standard washed or natural beans. That means they roast different, too.

  • Higher sugar = faster Maillard reactions

  • Uneven moisture = uneven color development

  • Trapped acids = quicker changes in flavor balance

  • More fragile aromatics = more risk of “roast cover-up”


I’ve scorched more anaerobic Ethiopias than I’d like to admit. The solution? Slow it down. Let the flavor come out before development phase, not just in it.

Typical Anaerobic Natural:

  • Charge Temp: 186°C

  • Dry End: 5:10

  • First Crack: 9:05

  • Development: 2:00

  • Drop Temp: 210°C

  • Flavor: Black cherry, cola, red wine


Typical Lactic Fermentation:

  • Charge Temp: 188°C

  • Stretch Maillard to 4 minutes

  • Keep RoR low post-crack

  • Drop early to preserve acidity

Mistakes I’ve Made (So You Don’t Have To)

⚠️ Roasting too hot too fast
Caramelizes sugars before acids develop. Muddied flavors.

Kills the delicate, high-end fruit. Ruins structure.

⚠️ Using same curve as washed lots
Doesn’t account for fermentation byproducts. Ends in imbalance.

⚠️ Ignoring defects from bad fermentation
Off-notes like vinegar, rubber, or fish sauce? That’s fermentation gone wrong—and no roast can fix it.

 

How to Cup Fermented Coffees

When evaluating, look for:

Fruit clarity (berry, tropical, citrus)
✅ Sweetness (grape, cherry, honey)
✅ Mouthfeel (wine-like, silky, juicy)
✅ Acid balance (not sharp, not flat)

Avoid:

  • Sour tang

  • Medicinal or moldy notes

  • Dirty ferment taste (a sign of poor post-harvest hygiene)
