  • Best for: Washed Ethiopians, Colombians, Kenyans


2. Natural Fermentation (Dry Process)

  • Whole cherries dried with the fruit on

  • Fermentation occurs inside the skin

  • Takes 2–3 weeks

  • Flavor: Fruity, jammy, heavier body

  • Best for: Brazilian, Ethiopian naturals, dry-processed lots


3. Anaerobic Fermentation

  • Beans sealed in tanks with no oxygen

  • Controlled environment

  • Often involves added yeasts or extended times

  • Flavor: Funky, winey, complex

  • Best for: Experimental lots, boutique microlots


You’ll often see producers blending these methods—or inventing wild new ones. (Looking at you, carbonic maceration fans.)
