1. Charge

  • The initial drum temp when beans are dropped in.

  • Typically 180–200°C.

  • Affects how fast you hit turning point and dry.


2. Drying Phase

  • First 3–6 minutes.

  • Beans go from green to yellow.

  • Evaporates moisture (~10–12%).


3. Maillard Phase

  • Beans begin browning.

  • Aroma forms.

  • Sugars break down into hundreds of compounds.

  • Most important for flavor complexity.


4. First Crack

  • Beans audibly pop as internal pressure bursts them open.

  • Start of development phase.

  • Typically at 195–202°C.


5. Development Time

  • Time after first crack to drop.

  • Builds sweetness, body, roast character.

  • 15–25% of total roast time is ideal.


On my Kafgar 6kg, I hit first crack at 8:30 and drop around 10:15 depending on the bean. I control gas and airflow precisely so no batch feels rushed or flat.

 

How to Control a Roast (Without Losing Your Mind)

🔥 Heat

Start strong, then taper. Avoid flat heat curves.

🌬️ Airflow

Use airflow to shape bean contact with hot air. Helps control smoke, chaff, and evenness.

🌀 Drum Speed

Higher speed = more agitation. Lower speed = deeper heat penetration.

📈 Rate of Rise (RoR)

The speed at which temp increases. Crucial for managing pace and avoiding crashes or flicks.
