Every time I roast coffee, it feels like I’m performing a little bit of magic. You start with green, grassy-smelling beans, and end up with these aromatic, crackling, golden-brown treasures. It’s part science, part art—and all about control.

When I finally upgraded to a Kafgar Roaster, everything changed. I went from just “heating beans” to truly crafting profiles, dialing in flavor, tracking data, and—yes—actually understanding what was happening inside the drum.

Roasting coffee is more than flipping a switch. It’s a journey through heat, chemistry, timing, and instinct. Let’s walk through it.


Why Roast Coffee?

Before roasting, coffee beans are:

  • Pale green

  • Flavorless

  • Full of moisture and potential

Roasting develops:

  • Sugars

  • Acids

  • Aromatics

  • Color

  • Caffeine delivery

It’s where beans become coffee.


Basic Roast Process

1. Drying Phase

  • Begins at charge (~150–170°C)

  • Lasts 4–6 minutes

  • Water content (~10–12%) evaporates

  • Beans yellow, smell like hay

2. Maillard Reaction

  • Browning stage (~150–180°C)

  • Sugars + amino acids = caramelization

  • Flavor complexity starts building

3. First Crack

  • ~195–205°C

  • Beans expand, release steam and CO₂

  • Audible pops—like popcorn

  • Start of development phase

4. Development

  • Post-first crack to drop

  • Build sweetness, reduce acidity

  • End here for light roast

  • Or continue for medium/dark

5. Second Crack (Optional)

  • 220°C


  • Louder snaps, oily surface begins

  • Enter dark roast territory

Then it’s straight into the cooling tray to stop the roast.

What You Control as a Roaster

🟠 Charge Temp
Where you start. Impacts roast length and heat absorption.

🟡 Rate of Rise (RoR)
How quickly the bean temp increases. Crucial for smooth curves.

🔴 Airflow
Carries away smoke, adjusts internal bean pressure, controls flavor clarity.

🟢 Flame/Gas Input
Your heat source. Boost for momentum, drop for stability.

🟣 Development Time
How long post-crack. More time = sweeter, heavier body.

Post-Roast Considerations

  • Cooling: Must be fast (under 4 min) to avoid “baking”

  • Degassing: Rest beans 2–7 days before brewing

  • Storage: Cool, airtight, no sunlight

  • Cupping: Always cup next day to log results


Common Roast Mistakes

❌ Too fast → baked or underdeveloped
❌ Too slow → flat, muted flavor
❌ No airflow → smoky, dirty roast
❌ Inconsistent batch size → profile shifts
❌ Ignoring DTR → unpredictable cups
