Around 197°C to 200°C is where I consistently find the first crack hits for the majority of washed Arabicas. For beans processed with honey or naturals? 200°C to 202°C is the higher skew. Additionally, don’t be shocked if the temperature approaches 203°C when roasting high-density Ethiopian or Kenyan beans.

Every roast, I like to record three important temperatures:

1. The turning point, usually between 90 and 110°C

 



2. Initial crack formation (~198°C)

 



3. Lower the temperature (depending on the roasting objective)

 



The basis of control is knowing precisely when the first crack occurs, not speculating.

It is your responsibility to lead the beans to the first crack, not to sprint there. I once roasted a Nicaraguan honey too quickly, hitting first crack at 192°C. The mug? Not very impressive. Raw almond and green apple. Completely undeveloped.

It opened up like a flower when I redrew the roast and allowed it to climb more gradually, reaching crack at 200°C. Nougat, peach, and honey. The difference was entirely due to that 8°C.

I frequently aim for 198.5°C and ride for 45 seconds of gentle post-crack development before dropping because I’m obsessed with light roasts. For my blend of espresso? I raise it to 202°C, hold it there for 75 seconds, and then quickly cool it down.

It all depends on how quickly you get to and get past the first crack. The subtlety lies there.

On one occasion, I roasted two batches of the same Colombian on separate days. Crack hit at 198°C in the first sunny day. The second was humid and rainy. At 202°C, crack occurred. Monitoring ambient conditions is important for this reason.

A few professional shops even record barometric pressure. Excessive? Perhaps. But wow, they are incredibly consistent.

A development ratio of 20–25% (time after crack vs. total roast time) is what I strive for. I will therefore develop for 2 to 2.5 minutes if my roast takes 10 minutes in total. However, that varies based on the bean.
